Add oil to medium sized sauce pan and turn to medium heat.
Add vermicelle noodles and fry until a dark golden brown color.
Add water, salt and rice and give it a good mix and cover.
Turn heat down to right between medium and low.
Simmer and cook for an additional 20+ minutes until rice is soft. I check on my rice every 10 minutes and give it a good stir to make sure nothing starts sticking to the bottom. If this happens, add a little more water and use a spatula to scrape the bottom of the pan.
Once rice is tender you want to remove from heat! Best served topped with a sprinkle more salt. Perfect side dish to any meal. Favorites to pair this rice with are Kafta and Yogurt Chicken.
